16 - 1/4 teaspoon red pepper flakes
17 - Salt and black pepper to taste

→ Garnish

18 - Fresh basil or parsley, chopped
19 - Nutritional yeast for sprinkling

# Directions:

01 - Heat olive oil in a large skillet over medium heat. Add chopped onion, celery, and diced carrots. Sauté for 5 to 6 minutes until softened and fragrant.
02 - Stir in minced garlic and cook for 1 minute until the aroma intensifies.
03 - Add lentils, tomato paste, crushed tomatoes, vegetable broth, oregano, basil, thyme, smoked paprika, and red pepper flakes. Stir thoroughly to combine all ingredients.
04 - Bring to a gentle simmer, cover partially, and cook for 25 to 30 minutes, stirring occasionally, until lentils are tender and sauce achieves a thickened consistency. Add additional broth or water if needed.
05 - Taste and adjust seasoning with salt and black pepper as desired.
06 - While the sauce simmers, spiralize the zucchini and carrots using a spiralizer or julienne peeler. Set aside until needed.
07 - Just before serving, lightly sauté the spiralized zucchini and carrots in a large pan over medium heat for 2 to 3 minutes until tender-crisp, or serve raw for maximum crunch if preferred.
08 - Distribute spiralized vegetables among serving plates. Top generously with lentil bolognese. Garnish with fresh basil or parsley and nutritional yeast if desired.

# Expert Advice:

01 -
  • It tastes indulgent and filling but leaves you feeling energized, not weighed down.
  • The sauce comes together in under an hour, making weeknight dinners feel less rushed.
  • Once you taste how good spiralized vegetables can be, youll never think of them as a diet trend again.
02 -
  • Dont crowd the pan when sautéing the base vegetables; giving them space lets them caramelize instead of steam.
  • The sauce will taste underseasoned when hot but will develop as it cools, so taste at the very end and season conservatively.
03 -
  • Invest in a spiralizer if youre going to make this regularly; it makes the prep so much faster and more enjoyable than using a vegetable peeler.
  • Smoked paprika is the secret ingredient that gives this sauce its depth, so dont skip it or use regular paprika as a swap.
